Asparagus Crab Soup (Sup Mang Tay Cua)
The soup is easy to make and is essentially an egg drop soup with asparagus and crab. Hungry Bear and I don’t like our asparagus mushy and brown, so I only cooked it for a few minutes. The soup turned out great and tasted like my mom’s, which made me and my tummy very happy!

Leek and Onion Tart
The tart had a pizza-like crust and the deeply caramelized onions and leeks were super sweet. There was also a hint of licorice flavor from the fennel seeds. Although it was not difficult to make, it was time consuming to make the dough and sauté the onions and leeks.

Vietnamese Steak and Watercress Salad
I grew up eating this Vietnamese steak and watercress salad. It’s a colorful salad with tomatoes and eggs. But, the star of the dish is the stir-fried beef and onions. It’s a great combination of savory and sweet.

Mushroom, Onion and Cheese Sandwich
Our version of the sandwich included portobello mushrooms, crimini mushrooms, onions and provolone on a focaccia roll. It was supposed to be gruyere, but our Trader Joe’s didn’t have any… not that provolone is a second class cheese.
