Sunday Nite Dinner Roundup
Over the last few months, we’ve had many great Sunday nite dinners. Sometimes I took pictures and other times I just wanted to eat and not bother with documenting the meal. Who wants to carry around camera equipment, a tripod and a lighting rig all the time?

Asparagus Crab Pasta with Leeks and Mushrooms
I added the juice and zest of a lemon to the pasta. Even with the canned crab claw meat, the pasta was really good. It had great flavors from the leeks and asparagus. The lemon juice and zest brightened up the pasta.

Hardy Kiwis (Baby Kiwis) – Small and Fuzzless
We stumbled upon hardy kiwis (a.k.a. baby kiwis) for the first time. These miniature kiwis are the size of a large grape (about 1 inch long) with an edible, fuzzless skin. They are sweeter and more flavorful than regular kiwis with a slightly sour skin.

Fried Eggs and Shrimp (Trung Chien Tom)
Sometimes the simplest food is the best food. It doesn’t get any easier than fried eggs and shrimp (trung chien tom). Throughout my childhood, my mom made this dish, serving it with steamed rice. It was so simple, yet so satisfying.

Fried Rice with Chinese Sausage and Broccoli
The beauty of fried rice is the endless variations that can be made from leftovers or random ingredients in the fridge. In my head, I have a basic shrimp fried rice recipe my mom taught me, but I can’t recall the last time I made it. Instead, each time we make fried rice, it’s a…
