Chocolate Oatmeal
https://sundaynitedinner.com/images/pictobrowser.swf <!– Hungry Bear and I recently discovered chocolate oatmeal courtesy of Jeff, one of my closest friends and Penn State buddy. He came out to visit us a few weeks ago to rest, relax, cook, eat and ride (road biking). Jeff actually prepared a few meals for us while he was here. You’ve gotta…

Okra, Corn and Tomato Sauté
The corn looked fantastic and the cherry tomatoes were super sweet. Hungry Bear told me that she had never cooked with okra, which surprised me, so that was a must get. The end result of our market bounty was this veggie sauté.

Mapo Tofu
We’ve been really bad about taking pictures of our Sunday nite dinners lately. Sometimes we just want to eat and not deal with the photography, especially when dinner is not at our place. It’s a pain in the butt to lug around the DSLR and tripod to our friends place and figure out the lighting…

Chocolate Blackout Cake
https://sundaynitedinner.com/images/pictobrowser.swf <!– First off, sorry for the lack of posts, but foodgawker has been "eating" up all of our time. Blueberry Muffins with Streusel Topping
The recipe is an adaptation of Ina Garten’s blueberry coffee cake muffins with a streusel topping added. The muffin part is delicious on its own with a moist and light cake like crumb filled with blueberries. And they aren’t overly sweet, which is a big plus for us.

Easy Vegetarian Fried Rice
Hungry Bear wanted to use the rice and whipped together this vegetarian fried rice using canned wheat gluten and snow cabbage & bamboo shoots. The fried rice is super easy to make. The canned goods have enough seasonings that no soy sauce is used. And there’s only a little salt to season the eggs.

Asparagus Crab Soup (Sup Mang Tay Cua)
The soup is easy to make and is essentially an egg drop soup with asparagus and crab. Hungry Bear and I don’t like our asparagus mushy and brown, so I only cooked it for a few minutes. The soup turned out great and tasted like my mom’s, which made me and my tummy very happy!

Leek and Onion Tart
The tart had a pizza-like crust and the deeply caramelized onions and leeks were super sweet. There was also a hint of licorice flavor from the fennel seeds. Although it was not difficult to make, it was time consuming to make the dough and sauté the onions and leeks.
