We both like fava beans, but for some reason (too much peeling) we haven't bought any. It wasn't until last week that we finally picked some up. Hungry Bear wanted to make a healthy pasta dish and created this shrimp, fava bean and zucchini pasta on a whim.</p>  <p>It was a simple pasta to prepare and required only saut&#233;ing the fava beans, zucchini and shrimp in a little olive oil and garlic. Since we both love angel hair pasta, we used it in our dish. In hindsight, we would have picked a tubular or shaped pasta, because it would have been easier to mix with the vegetables.</p>

Tubular or shaped pastas will be easier to mix into the fava and zucchini mixture.</div>    <br />    <div class="ingredients">Ingredients</div>    <ul class="ingredients-list">     <li>1 pound of shrimp, peeled and deveined </li>      <li>5-6 garlic cloves, minced </li>      <li>4 tablespoons olive oil </li>      <li>3 pounds fava beans (3 cups shelled), removed from pods </li>      <li>7 small zucchinis, ends trimmed and chopped </li>      <li>4 tablespoons flat leaf parsley, chopped </li>      <li>1 tablespoon hot pepper flakes (adjust to taste) </li>      <li>16 ounces pasta </li>      <li>1/3 cup parmesan cheese, finely grated </li>      <li>Salt and pepper </li>   </ul>    <div class="directions">Directions</div>    <ol class="directions-list">     <li>Remove fava beans from pods. Then cook fava beans in large pot of boiling water until crisp-tender, about 2-3 minutes. Remove fava beans and peel outer skin. Set aside in bowl. </li>      <li>Bring 6 quarts of water to a boil. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add half the garlic and saut&#233; for 30 seconds. Add shrimp and saut&#233; until barely cooked through, about 2-3 minutes. Remove shrimp and garlic and set aside. </li>      <li>Meanwhile, salt the boiling water, add the pasta and cook until al dente. Reserve pasta water. </li>      <li>Add 2 tablespoons oil to skillet and saut&#233; the zucchini until crisp-tender, about 4-5 minutes. Season with salt and pepper to taste. Add fava beans and hot pepper flakes and mix together well. Re-adjust seasonings. </li>      <li>Add the pasta to skillet and toss with bean and zucchini mixture. If pasta is dry, add a few ladles of pasta water and/or olive oil. Adjust seasonings to taste and mix in parsley. Serve pasta immediately topped with grated parmesan, shrimp and a drizzle of olive oil. </li>   </ol>    <p>Makes 6-8 servings</p> </div>  <p></p><p>a</p>

But as we were grocery shopping, I saw a cheap can of crab meat (1 pound for $7.99). Since we are on a recession budget, I decided to give the canned crab a try. And the penne dish morphed into an asparagus crab pasta with leeks and mushrooms.</p>  <p>I tried to keep the pasta simple and make it a one pot dish... well two pots, you need another one to cook the pasta, but you get my point. After I saut&#233;ed the garlic, leek, asparagus and mushroom mixture, I gave it a taste and it was great by itself. I opened the can of crab and finally realized it was all claw meat... damn it! No wonder it was so cheap.</p> 

  <p>I usually eat my steamed crab dipped in a mixture of lemon juice, salt and pepper. So, I added the juice and zest of a lemon to the pasta. Even with the canned crab claw meat, the pasta was really good. It had great flavors from the leeks and asparagus, while the lemon juice and zest brightened up the pasta. Sadly, I overcooked the asparagus by being overzealous with my picture taking.</p>  <p>Next time I make this dish, I'll use fresh crab meat, not take pictures while cooking and this asparagus crab pasta will be even better. Let's hope this recession ends soon!</p>  <hr />  <p><strong>Side Note:</strong> Hungry Bear and I will be moving next week... a long distance move of 1.5 miles. We'll be busy with packing and un-packing for the next two weeks, so new posts will be limited during this time. The good news is we'll be cooking and baking in a much nicer, remodeled kitchen. If the pasta is dry after all ingredients are combined, add a little pasta water and/or a drizzle of olive oil. I used penne in the dish because it was in the pantry, but any pasta can be used. </div>    <br />    <div class="ingredients">Ingredients</div>    <ul class="ingredients-list">     <li>3 tablespoons extra virgin olive oil </li>      <li>3 cloves garlic, minced </li>      <li>2 large leeks, halved and thinly sliced </li>      <li>2 tablespoons butter </li>      <li>1 large bunch of asparagus (about 1.5 pounds) </li>      <li>10 ounces mushrooms, sliced </li>      <li>1/2 teaspoon salt, plus additional to taste </li>      <li>1/4 teaspoon ground black pepper, plus additional to taste </li>      <li>2 tablespoons fresh parsley, minced </li>      <li>2 lemons - 1 lemon zested and juiced, 1 lemon cut in wedges </li>      <li>1-2 Thai chili peppers, minced (optional) </li>      <li>1 pound cooked crab meat, remove any shells or cartilage </li>      <li>1 pound pasta (penne, fettuccini or your favorite type), cooked </li>   </ul>    <div class="directions">Directions</div>    <ol class="directions-list">     <li>In a large, heavy-bottomed pot heat 2 tablespoons of oil over medium heat. Add garlic and leeks cook until leeks are softened, about 2-3 minutes. Add butter, remaining 1 tablespoon of oil,&#160; asparagus, mushrooms, salt and pepper; saut&#233; until vegetables are tender, but with a bite. </li>      <li>Add parsley, lemon zest, lemon juice, chili pepper, crab meat and mix in with vegetables. Adjust salt and pepper to taste. Add pasta; mix thoroughly and heat through. Serve with lemon wedges and a drizzle of olive oil. </li>   </ol>    <p>Makes 4-6 servings</p> </div>  <p></p><p>a</p>

Add some mushrooms, garlic, orecchiette, a sprinkle of Parmigiano Reggiano and you'll have a tasty pasta dish that can be prepared in 30 minutes.</p>  <p>Hungry Bear likes pasta dishes without tomato sauce because the individual flavors of the ingredients are not dominated by a tomato taste. Recently, we've made most of our pasta without tomato sauce. Our current favorite pasta is an orecchiette with hot Italian sausage.</p>

<p>This pasta dish is simple to make. We really like the spiciness from the hot Italian sausage complimented by the sweetness of the peas. The orecchiette gets coated by the juices from the sausage and mushrooms, so the pasta dish isn't completely dry. I try to make the dish a little healthier by draining off some of the fat/juices from the sausage. But if you remove too much juice, you'll lose a lot of flavor and there won't be enough juice to coat the orecchiette. It's a fine balance between flavor and fat.</p>  <p>To complete the meal, make a side of saut&#xE9;ed broccolini with garlic. You can also combine the broccolini with the pasta and have one big bowl of happiness and deliciousness!</p>  <div class="recipe">   <h2>Orecchiette with Hot Italian Sausage Recipe</h2>    <p><strong>Ingredients:</strong>       <br />1 pound orecchiette pasta&#xA0; <br />2 tablespoons olive oil       <br />1 pound hot Italian-style sausage, casings removed&#xA0; <br />4 garlic cloves, minced       <br />12-16 ounces mushrooms, sliced       <br />1 1/2 cups frozen sweet petite peas       <br />Handful of basil, torn       <br />Salt and pepper       <br />1/4 cup grated Parmigiano Reggiano</p>    <p><strong>Directions:</strong>       <br />Bring 6 quarts of water to a boil. Heat the olive oil in a very large skillet over medium heat. Add the sausage and cook, breaking it up into small pieces with a wooden spoon. When the sausage is almost cooked through, about 7 minutes, drain some but not all of the sausage juices/fat. Add the garlic and mushrooms, saut&#xE9; about 5 minutes. Add frozen peas and heat through, about 2 minutes.</p>    <p>Meanwhile, salt the boiling water, add the orecchiette and cook until al dente, stirring occasionally, about 10 minutes.</p>    <p>Add the pasta and basil to the skillet, toss pasta and sausage mixture. If pasta is too dry, Add additional pasta water or olive oil. Add salt and pepper to taste. Serve pasta immediately topped with grated Parmigiano Reggiano.</p>    <p>Serves 4</p> </div>  <p></p><p>a</p>

                </script>  <p>This&nbsp;past&nbsp;weekend my buddy, Chad, drove up from LA with his wife, Kristie, and their two young kids, Chelsea and Brooke, ages 2 years and 4 months, respectively. Chad was coming up for our annual Penn State Football weekend in San Francisco. It's just a get together&nbsp;with my two West Coast Penn State friends, Chad and Chuck, to hang out and watch&nbsp;a PSU game. I think we've held&nbsp;this event since 1998. Unfortunately, Chuck from Seattle couldn't make it this time.</p> <p>After a weekend filled with Korean BBQ, Hawaiian, Chinese and Burmese food, I was&nbsp;wondering what to make for Sunday night dinner. Thankfully, Jane texted me Sunday morning stating that&nbsp;dinner was at her place. Her brother, Garry, was planning on making&nbsp;a slow-roasted pork shoulder and his wife, Karen, was making a strawberry cream cake. We were definitely looking forward to dinner.</p> <p>Chad and I went&nbsp;on a 50 mile <a title="Paradise Dr Ride via MotionBased" href="http://trail.motionbased.com/trail/activity/4227773" rel="external">bike ride to Tiburon</a> and afterwards, we were famished. I told Chad that we should snack on something before heading over for dinner, otherwise, everyone would think we were complete pigs if we devoured all the food ourselves. My reputation as a glutton has already been established, but I wanted to protect Chad's image.</p> <p>Dinner started with a pasta dish that Garry threw together with hot Italian sausages, mushrooms, peas, onions and tomato sauce. As a side dish, we&nbsp;sautéed some Kale with garlic, olive oil, sea salt and a touch of butter. To make the kale more tender, we blanched it first. The pasta was excellent with spicy sausage and sweet peas. The kale was tender and tasty.</p> <p><img alt="Strawberry Cream Cake" src="http://farm3.static.flickr.com/2324/1583781475_fb793fad19.jpg"></img></p> <p>Next up was Karen's strawberry cream cake. <a title="Chez Karine Patisserie" href="http://www.chezkarine.com/about.htm" rel="external">Karen</a> is a trained pastry chef, so we are always looking forward to eating her <a title="Dessert Photo Gallery" href="http://www.chezkarine.com/gallery/FrameSet.htm" target="_blank">beautiful desserts</a>.&nbsp;This time, she was trying out&nbsp;a <a title="Recipe at America's Test Kitchen" href="http://www.americastestkitchen.com/recipe.asp?recipeids=3432&amp;iSeason=7" rel="external">strawberry cream cake recipe</a> from America's Test Kitchen. The recipe is from the current season of America's Test Kitchen TV show, and it's&nbsp;free if you register&nbsp;for the site. The cake is like strawberry shortcake and consists of white cake, strawberry filling, whipped cream&nbsp;with cream cheese and fresh strawberries. The cake was amazing! It was surprisingly light and not too sweet.</p> <p>While the strawberry cream cake was great, it was only a palate cleanser for the slow-roasted pork shoulder. Actually, Garry and Karen were tied up and couldn't get the pork in the oven early enough. Since it takes a few hours to roast, the pork wasn't ready until after dessert. And none of us were leaving without trying the pork!</p> <p>Garry&nbsp;based the pork roast off of this <a title="Slow-Roasted Pork Shoulder at Simply Recipes" href="http://www.elise.com/recipes/archives/001495slowroasted_pork_shoulder_with_melted_apples.php" rel="external">slow-roasted pork shoulder with melted apples recipe</a>. He omitted the apples and onions and&nbsp;cut the cooking time. Without the apples and onions, there was less braising and more roasting. Garry thought the pork shoulder was too dry, but everyone at dinner thoroughly enjoyed it. The pork had a crispy, caramelized crust and the meat was full of flavor. The two big carnivores of the group, Jane and I, couldn't stop grabbing more pieces of&nbsp;pork shoulder. I definitely want to make this dish again with the melted apples.</p> <p>Dinner was very fun and scrumptious. It was also great sharing Sunday night dinner with Chad and his family. After a long weekend of non-stop eating festivities and a Sunday morning <a title="Piermont Ride Data via MotionBased" href="http://trail.motionbased.com/trail/activity/4047670" target="_blank">bike ride to Piermont</a>, I just wanted to curl up for a extended nap instead of dinner planning. We were cooking for several meat-and-potatoes people, so we tossed around making skirt steak or meat loaf. We settled on good old reliable spaghetti bolognese. The rest of the menu was...</p>  <p align="center"><strong>Heirloom Tomato and Butter Leaf Lettuce Salad</strong>     <br />with avocados, medium boiled eggs, bacon lardons and Dijon vinaigrette</p>  <p align="center">~</p>  <p align="center"><strong>Vietnamese Green Papaya Salad</strong>     <br />with basil, beef jerky and nuoc cham</p>  <p align="center">~</p>  <p align="center"><strong>Spaghetti Bolognese</strong>     <br />topped by basil and shaved Parmigiano Reggiano</p>  <p align="center">~</p>  <p align="center"><strong>Lemon Pound Cake</strong>     <br />accompanied by fresh strawberries</p>  <p>Why the green papaya salad? Well, Jeff invited his cycling club friend, <a title="Cross Country Mules" href="http://crosscountrymules.googlepages.com/" target="_blank">Maggie</a>, who volunteered to make the papaya salad if it fit into the menu. At that point, the menu was &quot;fluid&quot; and we neglected to tell Maggie what we were making. That's how you end up with a tasty and refreshing green papaya salad with spaghetti bolognese. The salad was made with green papaya, basil, shredded beef jerky and topped with <a title="Nuoc cham recipe" href="http://www.vietworldkitchen.com/recipes/basics/nuoccham.htm" target="_blank">nuoc cham</a> (Vietnamese dipping sauce).</p>  <p>Recently, Hungry Bear and I have had a penchant for making salads with avocados and medium boiled eggs. I lost track of the time when boiling the eggs, and as you'll see in the slideshow, they turned into hard boiled eggs. For extra flavor and to complement the creamy avocados, we fried up some bacon lardons. Coupled with heirloom tomatoes and lightly dressed greens, this salad rocks.</p>  <p>Jeff made the spaghetti bolognese and used this <a title="Simple Bolognese by Giada De Laurentiis" href="http://www.foodnetwork.com/food/cda/recipe_print/0,1946,FOOD_9936_22326_PRINT-RECIPE-FULL-PAGE,00.html" rel="external">simple bolognese sauce recipe</a> by Giada De Laurentiis. It's an easy recipe that requires minimal prep time and ingredients. Compared to <a title="Veal, Pork and Porcini Bolognese Sauce" href="http://sundaynitedinner.com/spaghetti-bolognese/">Michael Chiarello's bolognese sauce</a> that Hungry Bear made in August, Giada's recipe uses more tomatoes and produces a meaty marina sauce, whereas, Michael's recipe makes a meat sauce with a touch of tomatoes. Both sauces are simple to make and delicious.</p>  <p><img alt="Lemon Pound Cake" src="http://farm3.static.flickr.com/2077/1527240704_e138998f4e.jpg" /></img></p>  <p>We ended dinner with a lemon pound cake and fresh strawberries. I used a classic pound cake recipe found in <a title="The New Best Recipe Cookbook at Amazon.com" href="http://www.amazon.com/New-Best-Recipe-All-New-Recipes/dp/0936184744/?tag=sunnitdin-20" target="_blank">The New Best Recipe</a> cookbook. The recipe can also be found on <a title="Classic Pound Cake Recipe" href="http://kat-on-thyme.typepad.com/kat_on_thyme/2006/07/the_pound_cake_.html" target="_blank">Kat on Thyme</a>, a friend of a friend's blog. The cake was turned into a lemon pound cake by adding the zest of two lemons. The pound cake was light, buttery, moist and delightful.</p>  <p>Overall, dinner was a little eclectic and very enjoyable. It was quite a challenge for four people to prepare a meal in a small kitchen (a very nice, recently remodeled kitchen). 		//]]&gt;</script>  <p>For the last few months, I've had a major craving for bolognese sauce. It all started during a trip to Geneva this past June. Hungry Bear had a conference in Geneva and I tagged along to keep her company. One evening, we walked down the street from our hotel, which was near the Pal-Expo, looking for a place to eat. We stumbled upon a nondescript Italian place that was part of small hotel. Since we were very hungry, we decided to give it a try.</p>  <p>Hungry Bear ordered spaghetti bolognese and I ordered penne puttanesca. I wasn't expecting much from the meal since it was a random hotel restaurant. My puttanesca was good, but Hungry Bear's bolognese was excellent. I should have known better, because I'm not a puttanesca type of person. I have a low tart/sour tolerance, so sauces with olives and capers aren't my cup of tea. Lucky for me, Hungry Bear likes dishes with tartness and we switched plates half way though dinner.</p>  <p>The bolognese sauce was thick and meaty without much tomato tanginess. It was fantastic! Since this meal, I've been obsessed with bolognese sauce. A couple of weeks ago, Hungry Bear made spaghetti bolognese to satisfy my craving for this meat sauce. She made it based on a recipe by Michael Chiarello -- <a title="Bolognese Sauce Recipe from Michael Chiarello" href="http://www.napastyle.com/recipe/recipe.jsp?productId=2619" rel="external">veal, pork and porcini bolognese</a>. It was absolutely delicious! She doubled the recipe and we had three meals of it. But, I was sad the bolognese didn't last longer.</p>  <p>After looking at the pictures above, my craving for the sauce has been re-ignited. I think I'll try a more classic recipe next time, perhaps this <a href="http://www.foodnetwork.com/food/cda/recipe_print/0,1946,FOOD_9936_22503_PRINT-RECIPE-FULL-PAGE,00.html" rel="external">ragu bolognese recipe</a> from Mario Batali.
