I use a cajun sauce injected until the bird looks like it is hemoraging. Then I dunk it in hot, bubbling rice oil and my turkey comes out deep, dark brown and very juicy. The turkey was too large for the stock pot and we had to hack off the butt... it wasn't pretty. And we had to ladle out some oil because it was bubbling over. But we learned from our mistakes and now deep-frying a turkey is pretty simple and much safer for us. It's definitely worth trying out.
