I finally have my deep fried turkey down to a science. I use a cajun sauce injected until the bird looks like it is hemoraging. Then I dunk it in hot, bubbling rice oil and my turkey comes out deep, dark brown and very juicy.

The first time we deep-fried a turkey there was much trepidation. The turkey was too large for the stock pot and we had to hack off the butt... it wasn't pretty. And we had to ladle out some oil because it was bubbling over.

But we learned from our mistakes and now deep-frying a turkey is pretty simple and much safer for us. It's definitely worth trying out.

I am very intrigued by this cooking technique, but have not yet been brave enough to try it. Maybe next year I will take the plunge. Thanks for the tips.
