Instead, we present to you a mango and coconut flognarde that Hungry Bear saw on <a title="Recipe: Mango and Coconut Flognarde" href="http://www.flagrantedelicia.com/en/desserts-puddings-and-souffles/un-rendez-vous-tropical/" rel="external">flagrantedelicia</a>. We always enjoy looking at the beautiful photography and desserts on Leonor's site.</p>  <p>We were supposed to make this flognarde for Sunday nite dinner last week, but ran out of energy to make dessert (we had a pre-dinner yoga session with a one of the SNDsters). A friend brought over ice cream cookie sandwiches from Trader Joe's instead. They were super delicious and a dangerous new TJ find.</p> 

  <p>Since then, we've had some ripe mangos sitting in the fridge, so Hungry Bear finally made the flognarde today. It turned out really well and we enjoyed this fruity, custardy dessert. It's easy to make and a nice light dessert to accompany a heavy, rich meal. It's not Chinese or Vietnamese in any way, but Hungry Bear didn't want to make anything too elaborate and we had two apples to use up. So that's how a cinnamon-apple cake got served at a New Year's party with Chinese hot pot.</p>  <p>I was working that day when Hungry Bear was baking the cake and I wasn't paying much attention. She told me that it was a Cooking Light recipe, but she was making it full-fat because she hates margarine and fat-free cream cheese. I honestly wasn't very excited about the cake. I don't get too excited unless there's chocolate involved.</p> 

  <p>I don't think anyone at dinner knew how damn good this cake was going to be. Then everyone wanted seconds. It's a light, moist cake with the perfect amount of sweetness from the cinnamon-sugar topping. Hungry Bear thinks it tastes like coffee cake and she'd happily eat it for breakfast.</p>  <p>Our friend, Deb, made it for a family gathering the next day. And I asked Hungry Bear to bake it again a few days later so we could document it for SND. If you want to make the light version, substitute margarine for the butter and use fat-free cream cheese. If using an 8-inch springform pan, bake it five minutes longer.</div>    <br />    <div class="ingredients">Ingredients</div>    <ul class="ingredients-list">     <li>1 3/4 cups sugar, divided </li>      <li>1 stick (8 tablespoons) butter, softened </li>      <li>1 teaspoon vanilla extract </li>      <li>6 ounces cream cheese, softened (about 3/4 cup) </li>      <li>2 large eggs </li>      <li>1 1/2 cups all-purpose flour </li>      <li>1 1/2 teaspoons baking powder </li>      <li>1/4 teaspoon salt </li>      <li>2 teaspoons ground cinnamon </li>      <li>3 cups chopped peeled Fuji apples (about 2 large) </li>      <li>Cooking spray </li>   </ul>    <div class="directions">Directions</div>    <ol class="directions-list">     <li>Preheat oven to 350&#176;F. </li>      <li>Beat 1 1/2 cups sugar, butter, vanilla, and cream cheese at medium speed of a mixer until well-blended (about 4 minutes). Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, and salt. Add flour mixture to creamed mixture, beating at low speed until blended. </li>      <li>Combine 1/4 cup sugar and cinnamon. Combine two tablespoons cinnamon mixture and apples in a bowl. Stir apple mixture into batter. Pour batter into an 9-inch springform pan coated with cooking spray. Sprinkle top with remaining cinnamon mixture. </li>      <li>Bake for 65-70 minutes or until the cake pulls away from the sides of the pan. Cool the cake completely on a wire rack. The cake and pudding are fantastic on their own, but combine the two and you have the best chocolate cake ever! </p>  <p>The last few times we've made this dessert we skipped the icing because it's very temperamental. Instead, we doubled the pudding and used all four layers of cake. Who's not going to like twice as much homemade chocolate pudding?</p>  <p>To prove how good this cake is, all you need to do is take a look at the last picture in the slideshow. That's our friend, Jane, having a piece while in early labor. I'm not kidding! We planned on cooking for Jane and Mark back in September. But, she started having contractions early in the morning so we figured dinner was off. Hungry Bear and I decided to make dinner anyway since we had already gone shopping. </p> 

  <p>Then, Jane called in the evening telling us that she was coming over for cake. We thought she was just joking, but Jane and Mark soon showed up at our door (the hospital is only a few blocks away). I told her she was welcome to have some dessert, but if her water broke she had to clean it up.</p>  <p>Luckily for us, there were no accidents. Jane enjoyed her cake while Mark was timing her contractions. It was one of the more entertaining Sunday nite dinners we've had in awhile. We sent Jane and Mark to the hospital with a good portion of the cake and Jane delivered a healthy baby boy, Dylan. When we visited Jane and the baby in hospital, she also declared it the best chocolate cake she's ever had!</p>  <p>P.S. We promise a savory dish in our next post. The cake can be served at room temperature, but we prefer to eat it cold. For us, the flavors and texture are better when the cake is served straight from the fridge.</div>    <br />    <div class="ingredients">Pudding Ingredients</div>    <ul class="ingredients-list">     <li>3 cups milk </li>      <li>2/3 cup sugar </li>      <li>1/2 teaspoon kosher salt </li>      <li>4 tablespoons cocoa (preferably Dutch processed) </li>      <li>2 tablespoons plus 2 teaspoons cornstarch </li>      <li>2 eggs </li>      <li>2 egg yolks </li>      <li>8 ounces semi sweet chocolate, finely chopped </li>      <li>3 tablespoons butter, at room temperature </li>   </ul>    <div class="ingredients">Cake Ingredients</div>    <ul class="ingredients-list">     <li>1 1/2 cups plus 1 1/2 tablespoons all-purpose flour </li>      <li>3/4 cup cocoa (preferable Dutch processed) </li>      <li>2 teaspoons baking soda </li>      <li>1 teaspoon baking powder </li>      <li>1/2 teaspoon kosher salt </li>      <li>2 eggs </li>      <li>2 cups sugar </li>      <li>1/2 cup vegetable oil </li>      <li>1 cup buttermilk </li>      <li>1 cup brewed coffee, at room temperature </li>      <li>1 teaspoon vanilla extract </li>      <li>3 dozen chocolate wafer cookies </li>   </ul>    <div class="directions">Directions</div> <br /><strong>To make the chocolate pudding:</strong>   <ol class="directions-list">     <li> Combine 2 cups milk with 4 tablespoons sugar in a small saucepan and bring to just under a boil. </li>      <li>In a mixing bowl, combine remaining sugar with salt, cocoa, and cornstarch. Whisk in remaining 1 cup unheated milk. Gradually whisk cocoa mixture into hot milk. Heat, over medium heat, stirring, until mixture thickens (about 5-7 minutes). </li>      <li>Whisk together eggs and egg yolks in a small bowl. Temper the eggs by adding a few tablespoons of the heated milk. Add the tempered eggs to the saucepan and stir for 30 seconds. Remove from the heat and whisk in chopped chocolate and butter. The pudding should be relatively thick (mud consistency) and will firm up when cooled. If pudding is still thin, continue heating over low heat, stirring until pudding thickens. Cool, cover with plastic wrap and reserve in refrigerator. </li> </ol>  <p> <strong>To make the cake:</strong></p>  <ol class="directions-list"> <li> Preheat oven to 350 degrees F. Lightly butter 2 (8-inch) cake pans and line with parchment. Butter the parchment and flour pans, shaking out the excess. </li>      <li>Sift together flour, cocoa, baking soda, baking powder, and salt. Reserve. </li>      <li>In a mixer with a paddle attachment, beat eggs and sugar until thick and lemon-colored. Beat in vegetable oil. Alternately add dry ingredients with buttermilk, scraping the bowl once or twice. Add the coffee and vanilla to form a thin batter. Divide between prepared cake pans. </li>      <li>Bake until a toothpick inserted in the center of a cake comes out clean, about 40 to 45 minutes. Cool in pan for 15 minutes. Invert onto cooling racks, peel off paper and cool completely. </li>      <li>When cool, split each cake in half with a serrated slicing knife. Spread bottom layer with 1/4 of the reserved chocolate pudding. Repeat with remaining layers, ending with pudding on top. </li>      <li>In a food processor, pulse the cookies into crumbs. Over the last month, I've been distracted by <a title="foodgawker | feast your eyes" href="http://foodgawker.com/" rel="external">foodgawker</a>, the election (I'm supporting &quot;<a title="That One &#39;08" href="http://www.thatone08.com/" rel="external">that one</a>&quot;) and <a title="Penn State Football" href="http://gopsf.com/" rel="external">Penn State Football</a>. I've spent entirely too much time in front of the computer, mostly with foodgawker, making it hard to crank out a post. We've been cooking regularly, but I've been too tired/lazy to pull out the camera and tripod to document our meals.</p>  <p>Hungry Bear has constantly reminded me that I'm neglecting SND. To appease her and some of our loyal readers (I hope you are still out there), we present to you look-we-still-love-you-and-SND everything cookies. As someone who loves to eat anything and everything, this cookie has it all... chocolate chips, peanut butter chips, raisins, nuts, granola and rolled oats.</p>  <p>It's a great recipe that Hungry Bear got from a friend over a decade ago. As the name implies, the cookie has everything you'd want... soft, crunchy, chewy, chocolaty, fruity and peanut buttery. I like to think that they're sort of healthy with the low-fat granola and rolled oats. It lessens the guilt after you inhale half a dozen cookies in five minutes!</p> 

  <div class="picture"><a title="Flickr: Everything Cookies" href="http://flickr.com/photos/sundaynitedinner/2929219923/in/set-72157607909388742/" rel="external"><img height="333" alt="Everything Cookies" src="http://farm4.static.flickr.com/3049/2929219923_1efa50cd3a.jpg" width="500" /></a></div>  <div class="recipe2">   <br />    <h2>Everything Cookies Recipe</h2>    <br />    <div class="snd-note"><span class="snd-note-title">SND Note:</span> Hungry Bear likes a little more saltiness in her cookies and would increase the quantity of salt to 3/4 of a teaspoon.</div>    <br />    <div class="ingredients">Ingredients</div>    <ul class="ingredients-list">     <li>1 1/2 cups low fat granola </li>      <li>1 cup golden raisins </li>      <li>1 cup old fashioned rolled oats </li>      <li>1 1/2 cups chocolate chips </li>      <li>1 cup peanut butter chips </li>      <li>1 cup chopped walnuts </li>      <li>1 2/3 cups all-purpose flour </li>      <li>1 teaspoon baking soda </li>      <li>1 teaspoon baking powder </li>      <li>1/2 teaspoon salt </li>      <li>1/2 cup packed dark brown sugar </li>      <li>1/2 cup granulated sugar </li>      <li>1 cup (2 sticks) unsalted butter, cut into small pieces </li>      <li>2 large eggs </li>      <li>1 teaspoon vanilla extract </li>   </ul>    <div class="directions">Directions</div>    <ol class="directions-list">     <li>Preheat oven to 350&#176;F. In a large bowl, toss in granola, raisins, rolled oats, chocolate chips, peanut butter chips and walnuts; set aside. </li>      <li>In a small bowl, sift flour, baking soda, baking powder, salt and whisk together. </li>      <li>In the bowl of a stand mixer, combine the granulated and dark brown sugar. Add a few pieces of butter at a time and beat until smooth and creamy. Add vanilla and beat in the eggs, one at time. Mix in flour mixture until just combined. Add the granola, raisins and chips and mix well together by hand. </li>      <li>Working with a generous 2 tablespoons of dough each time, roll the dough into 2-inch balls. Place the balls onto baking sheets, spacing them at least 2 inches apart. </li>      <li>Bake until the cookie edges turn golden brown, 12 to 15 minutes. Let the cookies cool on the baking sheets for 3 minutes. Transfer the cookies with a wide spatula to a wire rack. Let cool at least 30 minutes. </li>   </ol>    <p>Makes about 3 dozen cookies</p> </div>  <p></p><p>a</p>

We hope to get back on a more frequent schedule soon. Second, we had our one year blogiversary at the beginning of the month, but sadly we didn't get chance to post about it. Hungry Bear did make this incredible chocolate blackout cake to celebrate the milestone.</p>  <p>She used a <a title="Blackout Cake Recipe via Food Network" href="http://www.foodnetwork.com/recipes/saras-secrets/blackout-cake-recipe/index.html" rel="external">blackout cake recipe</a> from <a title="Cookbook: Sweet Stuff by Karen Barker" href="http://www.amazon.com/Sweet-Stuff-Barkers-American-Desserts/dp/0807858609/?tag=sndster-20" rel="external"><em>Sweet Stuff: Karen Barker's American Desserts</em></a>, but substituted bittersweet Valrhona chocolate for the semisweet. The cake is absolutely delicious, but it's time consuming to make because of the many steps... coffee brewing, pudding creating, cake baking, cookie crumbling and icing making. We loved the pudding and the cake part. There was an extra layer of unused cake and it was fantastic by itself. </p>  <p>The icing tasted good, but we didn't like the hardened texture and it was difficult to work with. If we had to make it again, we would use Gale Gand's <a title="Gale Gand&#39;s Fudgy Frosting" href="http://www.foodnetwork.com/food/cda/recipe_print/0,1946,FOOD_9936_27517_PRINT-RECIPE-FULL-PAGE,00.html" rel="external">fudgy chocolate frosting</a> instead. Luckily we remembered in time or we'd still be kicking ourselves. </p>  <p>We recently bought four pounds of blueberries. Almost half of them went into a <a title="Recipe: Blueberry Kuchen/Pie" href="http://sundaynitedinner.com/blueberry-kuchen/">blueberry kuchen</a> that Hungry Bear can't get enough of. I made the kuchen and we devoured it in two days. With the remaining berries, she made these amazing muffins with a streusel topping.</p> 

  <p>The recipe is an adaptation of Ina Garten's blueberry coffee cake muffins with a topping added. The muffin part is delicious on its own with a moist and light cake like crumb filled with blueberries. And they aren't overly sweet, which is a big plus for us. Also remember to evenly distribute the blueberries across the muffin cups. </div>    <br />    <div class="ingredients">Streusel Topping Ingredients</div>    <ul class="ingredients-list">     <li>1/2 cup all-purpose flour </li>      <li>1 teaspoon ground cinnamon </li>      <li>1/2 cup firmly packed light brown sugar </li>      <li>4 tablespoons (1/2 stick) unsalted butter, slightly softened and cut into 1/2-inch pieces </li>   </ul>    <div class="ingredients">Muffin Ingredients</div>    <ul class="ingredients-list">     <li>2 1/2 cups all-purpose flour </li>      <li>2 teaspoons baking powder </li>      <li>1/2 teaspoon baking soda </li>      <li>1/2 teaspoon kosher salt </li>      <li>12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature </li>      <li>1 1/2 cups sugar </li>      <li>3 large eggs, at room temperature </li>      <li>1 1/2 teaspoons pure vanilla extract </li>      <li>8 ounces sour cream </li>      <li>1/4 cup milk </li>      <li>3 cups (1 1/2 pints) fresh blueberries, stems removed </li>   </ul>    <div class="directions">Directions</div>    <ol class="directions-list">     <li>For the topping, in a medium bowl, stir together the flour, cinnamon, and brown sugar. Add the butter pieces and combine the mixture with a fork until the topping resembles coarse crumbs. Set aside. </li>      <li>Preheat oven to 350&#176;F. Place paper liners in muffin pans. In a separate medium bowl, sift together flour, baking powder, baking soda, and salt. </li>      <li>With an electric mixer fitted with a paddle attachment, cream the butter and sugar until light and fluffy, about 5 minutes. At low speed, beat one egg in at a time, then add vanilla, sour cream, and milk until combined. Add 1/3 of dry ingredients at a time and beat until just combined. With a spatula, evenly fold blueberries into batter. </li>      <li>Scoop batter into muffin pans and fill each cup to the top. Sprinkle topping evenly over batter. For the most part, I don't think you are interested in what Hungry Bear and I do outside of our adventures in the kitchen. But, I'm making an exception with this post to fully explain why we made these decadent cocoa brownies.</p>  <p>I've mentioned our NYC friends, Jeff and Aimee, in the past. They organized our first <a title="Post: New York City Cupcake Tasting Tour" href="http://sundaynitedinner.com/new-york-city-cupcake-tasting-tour/">cupcake tasting tour</a>. I met Jeff in 1990 when I was a sophomore at Penn State. Despite getting off on the wrong foot (Jeff initially disliked me, imagine that?), we become very close and eventually lived together for a year and half.</p> 

  <p>I remember whipping up homemade hashbrowns with Jeff at 2:00 AM, when normal college kids would go get pizza. I was there when Jeff and Aimee started dating. They had to keep it a secret initially and it was funny how they snuck in kisses when no one else was looking. I was honored to be in their wedding party six years later. Now, they have a beautiful baby girl, Ava.</p>  <p>We only see each other once a year, twice if we're lucky. But, I have great memories of their visits to San Francisco and my visits to NYC, especially the meals. We've spent time on vacation together in France, Italy and Canada. Despite not living in the same city in over 15 years, we've remained extremely tight and they are still my closest friends.</p>  <p>Last week, Jeff and Aimee received a double dose of bad news. I was stunned and saddened. I've spent a lot of time talking on the phone with them trying to comfort them. I wish I lived in NYC because I feel so useless in San Francisco. Besides being there 24/7 whenever they needed to chat, the only other thing I could do was to make some comforting food for them. </p>  <div class="picture"><a title="Flickr: Pouring Cocoa Brownie Batter" href="http://flickr.com/photos/sundaynitedinner/2502911827/in/set-72157605126355592/" rel="external"><img height="333" alt="Pouring Cocoa Brownie Batter" src="http://farm3.static.flickr.com/2403/2502911827_d22d5647b6.jpg" width="500" /></a></div>  <p>Cookies and brownies are probably the easiest things to ship cross country. So, we planned on making cream cheese brownies. One of the first things I ever baked was cream cheese chocolate cupcakes that I made for Aimee. I actually had to make two batches of the cupcakes, because my dog, a little cock-a-poo named Champagne, ate the first batch. Never let cupcakes cool on top of a coffee table when a hungry dog is prowling!</p>  <p>We planned on using Alice Medrich's classic chocolate brownie recipe, modifying it slightly and adding a cream cheese filling. Then we realized that shipping cream cheese baked goods at room temperature was probably not a good idea. Instead, we settled on making Medrich's best cocoa brownies.</p>  <p>We used Valrhona cocoa powder and the brownies turned out great. They weren't too sweet and they had a deep, bittersweet chocolate flavor. Our only issue was the brownies were on the thin side. We would have doubled the recipe had we known. Are they the best cocoa brownies as the name suggests? Well, they're pretty damn close, but we prefer the taste and texture of the <a title="Recipe: Chocolate Bouchons" href="http://sundaynitedinner.com/chocolate-bouchon-battle/">chocolate bouchons</a> a little more.</p>  <p>Anyway... Jeff, Aimee and Ava, when you receive the package, besides the original item I was sending, you'll find a little tin of brownies. I hope they are still good and fresh. And I hope you can find a little comfort in them. The ingredients and directions are the same except for step 2. The original direction was to add the butter, sugar, cocoa and salt in the bowl all at once and to melt the butter and make a smooth mixture, which takes forever. We think it's easier to melt the butter first then add the remaining ingredients. The next time we make this recipe, we would double it to make thicker brownies.</div>    <br />    <div class="ingredients">Ingredients</div>    <ul class="ingredients-list">     <li>10 tablespoons (1 1/4 sticks) unsalted butter </li>      <li>1 1/4 cups sugar </li>      <li>3/4 cup plus 2 tablespoons unsweetened cocoa powder (natural or Dutch-process)        <br />1/4 teaspoon salt </li>      <li>1/2 teaspoon pure vanilla extract </li>      <li>2 cold large eggs </li>      <li>1/2 cup all-purpose flour </li>      <li>2/3 cup walnut or pecan pieces (optional) </li>      <li><strong>Special equipment:</strong> An 8-inch square baking pan </li>   </ul>    <div class="directions">Directions</div>    <ol class="directions-list">     <li>Position a rack in the lower third of the oven and preheat the oven to 325&#176;F. Line the bottom and sides of the baking pan with parchment paper or foil, leaving an overhang on two opposite sides. </li>      <li>In a medium heatproof bowl, add the butter and set on top of a large sauce pan with barely simmering water. Melt the butter, then add sugar and salt, and stir until well combined. Next add the cocoa powder and stir until mixture is smooth and hot enough that you want to remove your finger fairly quickly after dipping it in to test. Remove the bowl from the skillet and set aside briefly until the mixture is only warm, not hot. </li>      <li>Stir in the vanilla with a wooden spoon. Add the eggs one at a time, stirring vigorously after each one. When the batter looks thick, shiny, and well blended, add the flour and stir until you cannot see it any longer, then beat vigorously for 40 strokes with the wooden spoon or a rubber spatula. Stir in the nuts, if using. Spread evenly in the lined pan. </li>      <li>Bake until a toothpick plunged into the center emerges slightly moist with batter, 20 to 25 minutes. Let cool completely on a rack. </li>      <li>Lift up the ends of the parchment or foil liner, and transfer the brownies to a cutting board. Cut into 16 or 25 squares. </li>   </ol>    <p><b>Chocolate note:</b> Any unsweetened natural or Dutch-process cocoa powder works well here. Natural cocoa produces brownies with more flavor complexity and lots of tart, fruity notes, which maybe more exciting for you. The berries were sweet, juicy and a great value, a flat (12 baskets) was only $14. And their organic berries were just a few dollars more. </p>  <p>Needless to say, we've eaten a lot of fresh strawberries lately and needed to make something with them. After pondering what to bake, we decided to turn our amazingly simple <a title="Post: Blueberry Kuchen" href="http://sundaynitedinner.com/blueberry-kuchen/">blueberry kuchen</a> recipe into a strawberry kuchen. The only changes to the recipe were the substitution of lemon zest and vanilla extract for the cinnamon.</p> 

  <p>The end result was a delicious strawberry pie that was a snap to make. We love the buttery crust of this kuchen. The baked strawberries turned into a wonderful compote and the pie looked beautiful topped with the fresh berries. If the strawberries are super sweet, reduce the sugar in step 2 to 1/3 cup.</div>    <br />    <div class="ingredients">Ingredients</div>    <ul class="ingredients-list">     <li>1 cup flour plus 2 tablespoons </li>      <li>1/8 teaspoon salt </li>      <li>1/2 cup sugar plus 2 tablespoons </li>      <li>1/2 cup (8 tablespoons) butter, slightly softened and cut into small pieces </li>      <li>1 tablespoon white vinegar </li>      <li>5 cups fresh strawberries, halved </li>      <li>1/2 teaspoon vanilla extract </li>      <li>Zest of one lemon </li>   </ul>    <div class="directions">Directions</div>    <ol class="directions-list">     <li>Preheat oven to 400&#176;F (204&#176;C). In medium bowl, mix 1 cup flour, salt and 2 tablespoons sugar. Cut in butter until it resembles coarse crumbs. Sprinkle with vinegar and shape into dough. With lightly floured fingers, press dough into 9-inch springform pan about 1/4 inch thickness on bottom, less thick and 1 inch high around sides. </li>      <li>Mix remaining 2 tablespoon flour and 1/2 cup sugar in a medium bowl. Add 3 cups strawberries, vanilla extract and lemon zest and gently mix together with sugar and flour. Evenly distribute strawberries on top of dough. Sprinkle any remaining sugar and flour mixture on top of strawberries. </li>      <li>Bake on the middle rack for 40 to 50 minutes or until crust is golden brown and filling bubbles. Remove from oven and place on cooling rack for at least 30 minutes. Arrange the remaining 2 cups strawberries on top. Run a pairing knife around the crust edge to separate from the pan before opening springform.&#160; Serve with a scoop of vanilla ice cream. </li>   </ol>    <p>Makes 8 servings</p> </div>  <p></p><p>a</p>

We actually made them for dessert in our <a title="Post: Pot Roast" href="http://sundaynitedinner.com/june-10th-snd-pot-roast/">first post</a> (scroll down) on the site. They were a big hit, so we made them again this past Sunday.</p>  <p>Although we loved Ina's union of chocolate and peanut butter, we thought her cupcake recipe had too many ingredients. I'm sure the cake part tastes great, but we would have bought sour cream and buttermilk, used half, and eventually thrown the rest away. </p>  <p>Instead, we turned to one of our favorite <a title="Recipe: Cream Cheese Stuffed Chocolate Cupcakes via Food Network" href="http://www.foodnetwork.com/food/cda/recipe_print/0,1946,FOOD_9936_27517_PRINT-RECIPE-FULL-PAGE,00.html" rel="external">chocolate cupcake recipes</a> by Gale Gand (BTW, her fudgy frosting is killer). We love the simplicity of the cupcake batter... no eggs, no butter, no mixer required.</p> 

  <p>For the peanut butter frosting, we reduced the sugar and butter, because we don't like overly sweet icings and there's plenty of creaminess from the peanut butter. The final change was the substitution of coconut cream for the heavy cream, since we had already opened a can of coconut milk for a <a title="Post: Veal Chops with Morel Mushrooms" href="http://sundaynitedinner.com/veal-chops-morel-mushrooms/">morel sauce</a> that evening.</p>  <p>The cupcakes were scrumptious with a moist and tender cake. The frosting had a great peanut flavor and wasn't too sweet. We had the SNDsters top their own cupcakes with cacao nibs and M&amp;M minis. And once again, they were enjoyed by all.</p>  <p>As we discussed the modifications and ingredients with the SNDsters, we realized that the cupcakes were almost vegan. I believe the only thing you need to do is substitute margarine for the butter. Since the peanut butter is so creamy, I don't think anyone would miss anything. The last time we made the frosting we reduced the cream per our usual MO. This time we replaced the heavy cream with coconut cream. Coconut milk separates into two layers when stored undisturbed in a can. I know, I know, how much carrot cake can someone eat? Well, I've eaten entirely too much of it in the last two weeks. After Hungry Bear made her <a title="Recipe: Carrot Cake with Cream Cheese Frosting" href="http://sundaynitedinner.com/carrot-cake-cream-cheese-frosting/">fantastic carrot cake</a>, I wanted to make a light version while her normal, full-fat version was still fresh on our minds.</p>  <p>The light carrot cake recipe was adapted from Cook's Illustrated (CI). I used all the CI fat reducing steps...</p>  <ul>   <li>Reduced the amount of oil from 1 1/2 cups to 1/2 cup </li>    <li>Reduced the number of eggs from 4 to 3 </li>    <li>Used Philadelphia Neufchatel reduced-fat cream cheese </li>    <li>Lowered the sugar quantity in the frosting </li> </ul>  <p>Then, I kept the majority of the normal cake's other ingredients to keep the flavors similar, which means pineapples and coconut flakes were included.</p>  <p>Cook's Illustrated's light cream cheese frosting recipe uses 12 oz of reduced fat cream cheese and no butter. I didn't like the idea of buying two 8 oz boxes of low fat cream cheese and not use 4 oz. So, I modified the recipe to use 8 oz of cheese and added a little butter. </p> 

  <p>The light carrot cake was pretty good. We thought the cake tasted similar to the full-fat version, but Hungry Bear's cake had a superior, more tender texture. The light cake was a little too moist and dense, which was a surprise given only half a cup of oil was used. It was probably due to the moisture of the carrots (3 cups) and pineapples. Grease 13 by 9-inch baking pan with vegetable oil. Line bottom of pan with parchment. </li>      <li>In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside. </li>      <li>Shred carrots using a box grater; set aside. In bowl of standing mixer fitted with paddle attachment (or in large bowl and using hand-held mixer), beat eggs, granulated and brown sugars on medium-high until they turn thick and creamy, 1 to 3 minutes. Turn the mixer to low and slowly add the oil until thoroughly combined and emulsified, 30 to 60 seconds. </li>      <li>On low speed, add half the flour mixture over the batter and gently mix in. Repeat once more with the remaining flour mixture and continue to mix the batter gently until most of the lumps are gone (do not overmix). By hand stir in the carrots, pineapple and coconut until well combined. Pour into cake pan and bake until toothpick or skewer inserted into center of cake comes out with a few moist crumbs attached, 35 to 40 minutes. Cool the cake in the pan for 10 minutes, then invert the cake onto a wire rack and remove the parchment paper. Flip the cake right-side up, and cool completely on a wire rack, about 2 hours, before frosting. </li>      <li>Mix cream cheese, butter, and vanilla at medium high speed in clean bowl of standing mixer fitted with whisk attachment ( or in large bowl using handheld mixer) until well combined, about 30 seconds, scraping down bowl with rubber spatula as needed.
